Moist Keto Carrot Muffins à la Minne! 🐱🧁


Muffin Ingredients:
• 2 1/2 cups almond flour (available here)
• 1 teaspoon baking powder
• a pinch of salt
• 1/2 cup sweetener (available here)
• 3 large eggs
• 1 cup grated carrots
• 1 1/2 teaspoons cinnamon
• 1/2 teaspoon ground ginger
• 1/4 teaspoon nutmeg
• 1 cup 10% Mediterranean yogurt
• 2 teaspoons of vanilla extract

Cream Cheese Ingredients:
• 1 package of softened cream cheese
• 1/2 cup softened butter
• 1 cup of Swerve powder (available here)
• 1 teaspoon vanilla

Method :
Preheat the oven to 400F. Prepare your 12-cavity muffin pan. Mix all the muffin ingredients well using a blender. Set the mixture aside and make your cream cheese mixture. Mix butter and cream cheese well until creamy. Add the powdered sugar little by little and finish with the vanilla. In your molds; Start by adding about a tablespoon of muffin mix. Then add a little less than a tablespoon of cream cheese. Keep the remaining cream cheese aside. And finish filling your molds with the remaining muffin mix. Mix the two mixtures GENTLY without touching the edges of the molds.

Cook for around 20min. Cool, top with remaining cream cheese and add nuts if desired. 😋

Makes 12 muffins.
