  • 1 cup crushed Quest Nutrition Protein Chips (Sour Cream & Onion flavor) for breading
  • 1 scoop of unflavored isolated whey protein
  • 2 large eggs
  • 1 cup grated parmesan
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil spray
  • For the topping: shredded cheddar cheese, crumbled bacon and sliced green onions

Preparation :

  1. Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a shallow bowl, combine the crushed protein chips, whey protein isolate, paprika, garlic powder and a pinch of salt and pepper.
  3. In another bowl, beat the eggs until frothy.
  4. Dip each onion ring into the egg mixture, then coat them with the crushed protein chips.
  5. Place the coated onion rings on the prepared baking sheet in a single layer, making sure they are not touching for even cooking.
  6. Spray the onion rings with a little olive oil. This will help them get a golden color.
  7. Bake in the preheated oven for 15 to 20 minutes or until crisp and golden.
  8. Once cooked, quickly top with grated cheddar and return to the oven just long enough for the cheese to melt, about 2 minutes.
  9. Finish by sprinkling with crumbled bacon and green onions.
  10. Serve immediately with a side of keto-friendly sour cream or your favorite low-carb dipping sauce.
