- 1 1/2 cup monk fruit (available here)
- 1 1/2 cup 35% cream
- 1/2 lbs butter
- 2 teaspoons vanilla
- 1 teaspoon maple essence (optional)
- 1 1/2 cup Swerve powder (available here)
Method :
Bring everything to the boil except the vanilla and essence, simmer for 15 minutes. Cool for 5 minutes and add the vanilla and essence. In a bowl, gradually put the Swerve powder into the cream mixture while mixing using a mixer. Add nuts if desired. Cool for 3-4 hours in the refrigerator until desired consistency.
Makes 15 pieces. (rectangular dish)
