Even on a ketogenic diet we have the alternative of a good strawberry shortcake recipe! 🍰

Vanilla Cake Ingredients:
• 3 cups almond flour (available here)
• 3/4 cup sweetener (available here)
• 3 eggs
• 2 1/4 cups strawberries, cut in half
• 3/4 cup 14% sour cream
• 3/4 cup of water
• 3/4 cup melted butter
• 1 1/2 tsp. teaspoon baking powder
• 1 1/2 tsp. teaspoon vanilla extract

Method :
Preheat the oven to 350F. In a bowl, mix the almond flour and baking powder, set aside. In the bowl of a food processor, mix all other wet ingredients well. Add the flour mixture. Beat again and transfer into two 9" round molds, previously greased. (if you only have one mold, you absolutely must bake twice) Cooking time is approximately 25 minutes. Leave the two slices of pasta to cool completely.

Icing Ingredient:
A container of 35% whipping cream (473 ml)
• 1/2 cup Swerve powder (available here)
• 1 C. vanilla extract

*Note: You can use a can of already whipped coconut cream to replace the 35% cream. Fewer carbs. (available here)

Method :
Whip the 35% cream, sweetener and vanilla until stiff like whipped cream. To book.

Strawberry butter ingredients:
• 3 cups frozen strawberries
• 1/2 lb butter
• 4 tbsp. tablespoon of sweetener (available here)
• 1 C. tablespoon of vanilla extract

Method :
In a pot, combine and heat all the ingredients. Cool completely and reserve in the fridge.

Assembling the Strawberry Shortcake:
With a first cake batter, put strawberry butter and some of the whipped cream, smooth well and add a few halved strawberries. Return the second dough and frost your cake with the remaining whipped cream. Garnish with strawberries on top! 😍
