Cake Ingredients:
• 3/4 cup coconut flour (available here)
• 1 1/2 tsp. teaspoon baking powder
• 6 tbsp. tablespoon of erythritol (available here)
• A pinch of salt
• 2 tbsp. tablespoon of vanilla extract
• 3/4 cup softened cream cheese
• 6 tbsp. tablespoon of melted butter
• 6 eggs

Sauce Ingredients:
• 1 cup homemade low-carb maple-flavored syrup (recipe here) or store-bought low-carb maple-flavored syrup (available here)
• 1 cup of Swerve brown sugar (available here)
• 1 1/2 cup of 35% cream
• 1/3 cup unsalted butter
• 1/4 to 1/2 tsp. teaspoon xanthan gum (available here)

Method :
Preheat the oven to 350F. Grease a deep square mold ( to avoid overflowing ) and set aside. In a bowl, mix all the dry ingredients together and set aside. Using a hand blender or food processor, whisk the wet ingredients in another bowl. Add the contents of the dry ingredients to the flour mixture, mixing again. Transfer to your cake pan. For the sauce, heat in a medium saucepan: the butter, the Swerve brown sugar, the maple flavored syrup and the 35% cream. Simmer for 20 minutes or until the sauce is slightly reduced. Add the xanthan gum little by little ( it should remain liquid ), mix well and pour the sauce delicately over the cake preparation. Cook for about 1 hour or until nicely browned.
