Vanilla Cake with Keto Vanilla Buttercream - Keys Nutrition

Here is a great basic recipe for a successful keto birthday cake or vanilla cupcakes! 🎂🧁

Ingredients Cake batter:
• 1 1/4 cup almond flour (available here)
• 1 C. teaspoon baking powder
• 1/2 tsp. xanthan gum (optional) (available here)
• 1/4 tsp. teaspoon of salt
• 4 tbsp. tablespoon of softened butter
• 1/3 cup erythritol (available here)
• 1/3 cup cream cheese
• 1 C. teaspoon vanilla extract
• 4 eggs

Method :
Place the oven at 350F. Grease and flour a cake pan, bread pan or even a 12-cavity muffin pan (or 24 minis) and set aside. In a bowl mix the flour, baking powder, xanthan gum and salt. In the bowl of a food processor, beat the butter and cream mixture until smooth. Add the erythritol, eggs and vanilla extract and mix again. Add the bowl of dry ingredients, mix again and pour your dough mixture into one of the chosen molds. Bake for 30 to 40 minutes for a cake or bread pan and around twenty minutes for cupcakes. Let cool completely.

Ingredients Vanilla Buttercream:
• 1/2 cup softened butter
• 1/4 cup Swerve powder (available here)
• 1/2 tsp. teaspoon vanilla extract
• 1 C. tablespoon of cream 35%

*Note: You can double the recipe if your cake has two layers and you want to add more buttercream decorations.

Method :
Using a food processor, beat the butter until creamy. Add the other ingredients and whisk again. If your buttercream is not “light” enough, add a tablespoon of 35% more cream. Set aside for assembling the cake or cupcakes.


Assembling the cake or cupcakes:

For a cake, you can cut your dough in half, place buttercream between the layers and ice your cake like this or simply cream it as is (add decoration with buttercream or fruit if desired) For cupcakes, the ideal is to use a bag with a large fluted tip for a pretty “rosasse” pattern, otherwise cream to your liking! 👩‍🍳
