Ingredients for the Cake:
• 3 cup almond flour (available here)
• 3/4 cup pure cocoa powder (available here)
• 2 tbsp. tablespoon of baking powder
• 1/2 tsp. teaspoon of salt
• 2/3 cup water or sugar-free almond/coconut milk
• 6 eggs
• 2/3 cup erythritol (available here)
• 3 tbsp. teaspoon vanilla extract

Icing Ingredients:
1/2 cup keto maraschino cherries ( recipe here )
• 2 cups of 35% whipping cream
• 1 cup mascarpone cheese
• 1/2 cup Swerve powder (available here)
• 1 C. teaspoon vanilla extract

Method :
 Preheat the oven to 350F. Grease and place parchment paper in two 9" round molds. (If you only have one mold, you must bake twice) Set aside. Heat your half cup of maraschino cherries in a small saucepan with 1 /2 tablespoon of sweetener of your choice. Simmer for a good 10 minutes or until jam-like consistency. If necessary, add a teaspoon of xanthan gum (available here) to thicken. Cool the jam completely in refrigerator. In a bowl, mix all the dry ingredients. Set aside. Using the food processor, mix the liquids and add your dry ingredients, mixing again until smooth. Separate your mixture evenly into the two molds and bake about twenty minutes. Unmold and let your cake batters cool completely. Meanwhile, whip your 35% cream until well whipped. Add the mascarpone and mix again, adding the extract and vanilla and the Swerve powder . Set aside for assembling the cake.

Assembling the Cake:
With a first dough, spread your cherry jam well. Add a generous layer of whipped topping and add a layer of cake batter. Add the rest of the whipped cream, decorating to your liking! 🍒
