Here is the recipe for carrot cake lovers, with a decadent cream cheese creaminess, all 100% keto! 🥕

Cake Ingredients:
• 4 eggs
• 1/3 cup olive oil (available here)
• 2 tbsp. teaspoon vanilla extract
• 1 cup sweetener (available here)
• 2 cups of almond flour (available here)
• 2 tbsp. teaspoon baking soda
• 1/2 tsp. teaspoon baking powder
• 1 C. teaspoon ground nutmeg
• 1 C. tablespoon of ground cinnamon
• A pinch of salt
• 1/2 cup walnuts
• 2 cups grated carrots

Method :
Preheat the oven to 350F. Grease and place parchment paper in two 9" round molds. (If you only have one mold, you must bake twice) In a bowl, mix all the dry ingredients except the grated carrots and walnuts. grenoble. Set aside. Using a food processor, beat the oil, sweetener, vanilla and eggs until smooth. Add the bowl of dry ingredients and finish with the carrots and nuts. Fill your molds equally and put in the oven for 30 to 45 minutes. (a toothpick should come out clean) Leave to cool completely.

Creaming Ingredients:
• 4 tbsp. tablespoon of unsalted butter
• 1 package (250g) softened cream cheese
• 1/2 cup Swerve powder (available here)
• 1/3 cup of 35% whipping cream
• 1 C. teaspoon vanilla extract

Method :
In the food processor, beat the butter with the cream cheese until creamy. Add the other ingredients, mix again and set aside for assembling your cake!

Assembling the Cake:
Take your two cooled cake batters. Put a quantity in the center, smooth well and put a dough on top. Cream everything and decorate as you wish.
